The rooms and suites are designed as calm, cocooning spaces that echo the surrounding forest. Between 75–80% of the workforce comes from the surrounding villages, and the hotel provides practical support for those living farther away through housing, transport, heating and food allowances, plus private health and life insurance for all employees. This makes work accessible to people who might otherwise have to move to cities for employment, and supports longer-term residency in the region.
Training is provided three times a year and most management roles are filled internally, which creates clear career pathways and reduces turnover.
The hotel also supports the local economy through supply chain choices. Forty percent of food and beverage ingredients are sourced from small nearby farms and wineries, and all guest experiences are delivered by local suppliers. This creates stable demand for local producers and service providers and helps keep income circulating within the region.
Water and waste are managed to reduce resource use and pollution. A water tank supports conservation, guest rooms are metered to control usage, and plastic bottles are eliminated, with filtered water provided in reusable glass jugs. Heating and cooling are supplied through a geothermal heat pump, reducing reliance on fossil fuels and lowering the hotel’s energy impact.

For decades the sanatorium sat unused in the Arcadian mountains, while local villages emptied as young people left for cities. MANNA restored the century-old protected building instead of demolishing it, turning it into a functioning hotel that re-energises the local economy without new construction or land development.
This reuse preserved cultural heritage and reduced the environmental impact that new building would have required, creating long-term infrastructure rather than a temporary tourism project.
The hotel’s operations also support rural regeneration through practical systems. Heating and cooling are supplied via a geothermal heat pump, reducing reliance on fossil fuels and demonstrating clean-energy technology that is viable in remote areas.
