Each of the 59 rooms is adorned with Camille Walala’s bold geometries — splashes of orange, turquoise and coral complement minimalist design across Garden View, Poolside and the coveted Best-on-Beach Suites, which feature private sun-lounging terraces. Guests sink into Swedish handcrafted Carpe Diem beds dressed with crisp organic-cotton linens, while balconies open onto serene garden, pool or ocean panoramas.


The hotel’s sole restaurant, The Good Kitchen, serves à la carte breakfast, lunch and dinner built around locally sourced, seasonal produce. Mediterranean, Middle Eastern and Mauritian flavours converge in creative plates — from the fish of the day and Mauritian curry thalis to inventive raw vegan delights. The SALT Bakery bakes artisanal breads and pastries each morning, while three bars — Rooftop, Pool and Beach — craft freshly prepared cocktails inspired by terrain, sea and sky, alongside a tempting selection of local rums and beers.


At the heart of its wellness offering, the SALT Equilibrium Spa is a boutique haven built around the benefits of salt therapy. In its serene salt room, guests can inhale mineral-rich vapour to soothe the respiratory system, before indulging in bespoke treatments — from body scrubs and wraps to massage rituals using organic oils and seasonal blends. An array of fitness and relaxation options complete the experience, including a 25-metre infinity pool, hammocks, beanbags, a library of over 300 Mauritian reads, and daily beach yoga and meditation. For the more adventurous, the hotel can arrange guided hikes up Le Morne or scenic coastal drives.

    The hotel operates primarily with a local workforce, ensuring that 100% of its full-time positions are offered to members of the surrounding community, thereby strengthening economic stability and reducing the environmental impacts associated with long commutes or international staff travel.


    The hotel’s procurement strategy is rooted in supporting local artisans, farmers, and suppliers, including its dedicated network of SALT-Shakers — a group of trusted local entrepreneurs such as fishermen, basket weavers, and cultural guides. By prioritising local supply chains, SALT of Palmar reduces transportation-related emissions, promotes economic empowerment, and ensures guests experience Mauritius through its heritage and craftsmanship.


    Waste reduction and water conservation form central pillars of the hotel’s climate efforts. SALT of Palmar operates a zero-food waste policy, composting all organic waste and using any leftover scraps as feed for local farms.


    The hotel segregates waste into green waste, food waste, glass, paper, and carton, working with dedicated contractors to ensure responsible recycling and reuse. Its waste-to-wealth program creatively upcycles materials like old bed sheets, jeans, and wooden pallets into functional and decorative items, such as tote bags, flowerpots, and furnishings, reducing landfill waste and extending the lifecycle of materials.


    To conserve precious water resources, the hotel has implemented water moderating devices, including low-flow showerheads and aerators, and operates its own sewage treatment plant, allowing treated wastewater to be reused for irrigation. This practice reduces the demand for freshwater resources and contributes to ecosystem protection by avoiding direct discharge of untreated water. The hotel’s swimming pool is powered by a solar heating system, while its lighting is fully comprised of energy-efficient LEDs, significantly reducing its overall energy consumption and reliance on fossil fuels.


    Guests are encouraged to adopt eco-friendly habits via the SALT Cube initiative, which promotes reuse of linens and towels and reminds visitors to switch off air conditioning and lighting when not in use. To further reduce its environmental impact, SALT of Palmar provides an electric car charging station, promotes eco-friendly transportation such as bicycle rentals, and operates within its long-established “Tread Lightly” initiative — a program launched in 2011 that aims to reduce waste, minimise emissions, and foster a culture of sustainable travel and climate consciousness.
